Virginia Louise Shattuck

It is with heavy hearts that we share the passing of Ms. Virginia Louise Shattuck, a beloved mother, grandmother, sister, and friend, who passed away peacefully at her home in Hillsboro, Oregon, on May 20, 2026. She was 83 years old.

She was born on August 24, 1942, on a farm in Everton, Missouri, to Charles and Leona Wilson. They moved to Dallas, Oregon where she and her sister, Linda, grew up. Her parents owned Dallas Floral which became a huge part of her life. Afterward, she moved to Hillsboro, Oregon where she spent most of her adult life.

She leaves behind her four daughters, Sandra McLaughlin, Kelly Baldock, Kacey Dahmen, and Khristie Dahlke, as well as her sister Linda Laird, 10 grandchildren, eight great grandchildren, and two great-great grandchildren.

Virginia met Jerry Miller shortly after high school through friends and was married to him from 1962 to 1973. In 1980, she met Joe Shattuck and was married to him from 1981 to 1996. After Joe's passing, she spent the rest of her life with Jose Custodio who was the love of her life.

Ginny had been a realtor, and a mortgage loan processor until she and her late husband, Joe Shattuck, bought and ran Joe's Pastime Tavern in Hillsboro. During that time, she and Joe were involved in many activities that helped those less fortunate. They began a fundraiser called Assist Aid and Help. The charity auctions they hosted brought in much needed funds for the needy.

Virginia will be remembered for her quiet strength, her generosity, her full-of-life personality, and her love for her family.

Services will be held in mausoleum at Fir Lawn Memorial Park, in Hillsboro, Oregon, June 1st at 11:00am. Afterward, family and friends are invited to gather at Elmer's Restaurant, 390 SW Adams Ave, in Hillsboro where we can all share memories and celebrate her life.
